Hearty Ham and Potato Soup
/Ingredients:
3 c cubed potatoes
1/2 c chopped onions
2 c grated or finely chopped carrots
1 c chopped celery
1/2-1 c chopped zucchini
3 c cubed ham
2 qts milk
3 tsp GF chicken bouillon
1/2 c butter
Bone broth
1 T Potato Starch
Cheddar Cheese
Directions
Step 1: Saute onions, celery, and zucchini in the butter.
Step 2: Add the rest of the vegetables, bouillon, and enough bone broth to cover the vegetables. Cook until vegetables are tender.
Step 3: Add ham and milk and bring to a boil. In a small bowl mix 1 T of potato starch with 3 T of water. Add to the soup and stir.
Step 4: Once fully cooked, serve and top with shredded cheddar cheese. Salt and Pepper to taste.
I have made this dairy free using a df butter and coconut milk.
We enjoy eating this with grilled cheese on the side You can also top with fresh herbs from your garden when in season.
