Frito Bake

Frito+Bake.jpg

Ingredients

  • Fritos

  • 1 lb. Ground Beef or Turkey

  • 1 garlic clove

  • 1-2 T Taco Seasoning (make sure this is gluten free or see my recipe for homemade!)

  • 1 can of black beans (or 1 cup of cooked dried black beans)

  • 1 cup frozen corn

  • 1 jar Tostitos Medium Salsa Con Queso Dip

  • 1 c shredded Colby Jack cheese

  • Salsa, shredded lettuce, sour cream, black olives, avocado all optional toppings

Directions

  • Step 1: Brown ground beef in a skillet. When almost done, add minced garlic clove, drained and rinsed black beans, and taco seasoning. Let simmer about 5 minutes. Add a little water if needed. Drain.

  • Step 2: Pour Fritos into a 9x9 baking dish. Use enough to cover the bottom. Top with taco meat. Disperse the frozen corn over the taco meat. Pour salsa con queso over the meat and corn mixture. Sprinkle with shredded cheese.

  • Step 3: Bake at 350 degrees 10-15 minutes or until cheese is melted and slightly bubbly.

  • Step 4: Dish and serve with your choice of toppings!

This recipe can easily be doubled to feed a larger family, we’ve just found that the dish does not reheat very well. Because of this, we choose to make the smaller 9x9 dish and serve with sides such as applesauce and rice.
